Interview With Author Huey Choi
Tell us about yourself and how many books you have written.
I am a corporate bankruptcy attorney with over twenty-five years of experience. I grew up in Southern California and graduated from the University of Southern California Gould School of Law. I was born into a prominent South Korean chaebol family, but at age four, my life was upended life when I immigrated to the United States with my siblings, leaving behind privilege for uncertainty.
Aside from my law practice, I am also the founder and CEO of Snubbed, LLC, a company dedicated to animal welfare with a mission to feed and rehabilitate neglected dogs around the world. I am also an avid traveler and food enthusiast.
I have written one book which was published in late April 2026.
What is the name of your latest book and what inspired it?
My debut memoir, “Who Stole My Pork Belly?”, was inspired by my journey as a first-generation immigrant from South Korea. The book chronicles my journey from privilege to uncertainty, and the resilience required to rebuild a life from the ground up. Even in the wake of unexpected challenges and profound personal losses, I wanted readers to know that it is possible to discover hope in the face of adversity. More than a personal story, my memoir is a testament to the strength of the human spirit and the belief that even life’s greatest setbacks can serve as the foundation for new beginnings.
Do you have any unusual writing habits?
I enjoy writing while listening to Dog Calming Music on YouTube, while my three rescue dogs are sound asleep.
What authors, or books have influenced you?
Crying in HMART
Pachinko
Two Women Living Together
What are you working on now?
With the recent release of my memoir, I am currently not engaged in any particular writing, but this could change at any moment.
What is your best method or website when it comes to promoting your books?
The best method or website is https://whostolemyporkbelly.com/
Do you have any advice for new authors?
You can’t edit a blank page. Focus on getting your first draft on paper while acknowledging that it won’t be perfect. Step away from the first draft and take your time revising the manuscript with a fresh perspective.
What is the best advice you have ever heard?
The best advice for life, in general, was “do the right thing not for an audience, but because you have to live with yourself”.
What are you reading now?
I’m currently reading “Educated” by Tara Westover.
What’s next for you as a writer?
Perhaps a sequel to “Who Stole My Pork Belly?” titled “Who Stole my Filet-O-Fish?”
If you were going to be stranded on a desert island and allowed to take 3 or 4 books with you what books would you bring?
The Great Gatsby
Man’s Search for Meaning
The Old Man and the Sea
