After years of following unsuccessful fad diets, Karen decided to change her approach to eating for good by consuming wholesome (yet tasty) foods only. In just 6 months, she lost over 40 pounds and restored her health and energy to new levels she never thought possible. Karen has now lost a total of 70 pounds and has a newfound passion for cooking, wellness and every day healthy living.
Karen strives to create quick and simple meals that are healthy but also taste good for the entire family and if entertaining guests. Her recipes are perfect for beginners who have little to no experience in the kitchen.

Quick meals that anyone can cook. I wanted to create a collection of recipes everyday cooking but also for entertaining.

A cookbook for college students. The book includes quick, affordable and healthy meals.
